Did anyone else’s Grandparents always have the best snacks? I remember my Grandparents always having lots of sweets…They had a candy dish full of Nips candy, and a pantry full of cookies, and chocolate lollipops. My sister and I always knew where to get our treats from. My Grandpa loved candy and pastries, but mostly the cheese Danish. When I realized that I could make his favorite, low carb and sugar-free… to say I was excited is an understatement.
While whipping up these yummies, I could feel my grandpa watching me, almost like guiding me through the process, because my fat head dough has NEVER turned out this good!
These danishes are not only a family favorite, but they are now on my go to list!
And, to all of you Danish haters, you must give these a try! I’m telling you, they are the perfect combination of light, and sweet.
The base of this pastry is made from the same fathead dough I used in my bagels!
Low Carb Cheese Danish
Ingredients:
Dough
2 1/3 cup Mozzarella Cheese
1 1/2 cup Almond Flour ( I use Bob’s Redmill)
1 egg
1/2 tsp Baking Powder
2 TBSP Swerve (Powdered)
1/2 tsp cinnamon
Filling
4 oz cream cheese (softened)
1 egg
3 TBSP Swerve (Powdered)
1/4 tsp. vanilla extract
Directions:
Dough
- Preheat oven to 350 degrees.
- Mix Almond flour, baking powder, swerve and cinnamon together.
- Pour your cheese into a microwave safe dish, and heat for 30 seconds.
- Stir your cheese and microwave in 15 second intervals until cheese is completely melted.
- Mix egg into melted cheese.
- Once incorporated, add dry ingredients and mix. (You can also knead with your hands)
- Roll into 12 balls, and push down on parchment paper.
Filling
- Mix all ingredients together until well combined (3 mins).
- Spoon into middle of each piece of dough (don’t worry if it runs over).
- Bake for 15-18 minutes.
