The Best Low Carb Sugar Cookie

Who doesn’t love a good sugar cookie?

There are those topped with sugar, sprinkles, icing…and then there is the debate on chewy versus crunchy! All are so delish!

My kids love a good cookie, and honestly, so do I! I went through a few recipes for a low carb, sugar-free version and finally came across this awesome low carb sugar cookie recipe.

The only thing I didn’t use was the xanthum gum, and not on purpose… I was under the weather while making these and you know, when your head is full, you can’t quite see straight. Well this mistake turned out to be a good one, because OMG, melt in your mouth, amazingness! These cookies are the perfect mix of nutty and sweet.

I whipped up a bit of homemade icing and sprinkled some of my homemade sprinkles that were used in my chocolate peppermint bark.


Low Carb Sugar Cookies

Ingredients

Cookies

2 cups almond flour

1 tbsp coconut flour

¼ tsp salt

6 tbsp butter, softened (I use Earth Balance Vegan Buttery Sticks to make the cookies non dairy)

½ cup Swerve, granulated 

1 large egg

½ tsp vanilla extract

Icing

1 cup Swerve 

1-2 TBSP Milk

instructions:

Cookies 

  1. In a medium bowl, mix together almond flour, coconut flour, and salt.
  2. Beat butter and Swerve in a large bowl, until creamy. Mix in the egg and vanilla extract.
  3. Add in almond flour mixture and mix until dough forms.
  4. Turn out dough onto parchment paper, and roll out to about 1/3-inch thickness.
  5. Chill dough for an hour.
  6. Preheat oven to 325F and line another baking sheet with parchment.
  7. Using cookie cutters of your choice, cut out cookies and place at least 1 inch apart on prepared baking sheet.
  8. Re-roll your dough and cut out more cookies (if your dough gets too soft, place in the freezer for 5 mins).
  9. Bake 12 to 14 minutes, or until brown around the edges.
  10. Let cool on pan.

Icing

  1. Mix Swerve and milk together with a fork until it looks like icing.
  2. Spread onto cooled cookies.
