Mini Mousse

As you know by now, I love mini desserts. I find that being able to enjoy intense flavors in 1-2 bites, is perfect! Don’t get me wrong, sometimes it takes more than 1 mini. And it’s even better when you need a fork or a napkin! One of my go to treats has always been chocolate fondue, and now (since I have no intention of buying a fondue set), I use chocolate mousse to dip.

Picture this, you go to an event with no place to sit, and giant plates and forks set out for dessert. You have to slice a piece of cake onto your plate, well that doesn’t always go so well, especially when the guy behind you is making you feel rushed! Am I right? This is literally what happened to me years ago, and seriously now there is no turning back to full size desserts!

It is a perfect pairing with strawberries, blueberries, bananas, and even my mini crusts!

Chocolate Chocolate Chip Mousse Mini Cups

Ingredients

Crust: 

  • 2 eggs
  • 1 tbsp extra virgin olive oil
  • 1 tsp vanilla extract
  • 1/4 cup Swerve sweetener 
  • 1/4 tsp salt
  • 1 cup coconut flour (I use Bob’s Redmill
  • 1/2 tsp cinnamon
  • 1/2 cup butter cold cut into cubes

Mousse:



Directions:

Crust:

  1. Preheat oven to 400 degrees F.
  2. Mix the eggs, oil and vanilla extract.
  3. In another bowl mix the remaining DRY ingredients together until combined.
  4. Pour the dry mixture into wet mixture, mix.
  5. Add the cubed butter.
  6. Mix until dough looks like crumbles.
  7. Grease a muffin pan.
  8. Take a TBSP of dough and press into bottom of tin.
  9. Poke holes in the bottom with a fork.
  10. Bake the crust 6 minutes or until golden.

Mousse:

  1. Whip heavy cream in small bowl.
  2. In large bowl, cream butter with Swerve, blend until completed incorporated.
  3. Add cream cheese and mix until smooth.
  4. Add cocoa powder and mix well.
  5. Mix in whipped cream.
  6. Stir in chocolate chips.
  7. Spoon into mini crusts, and store in refrigerator.
