Cinnamon Buns, Low Carb Style

A long time ago, my family and I would go have dinner at our local mall, once a week. The mall had a few restaurants, a candy store, ice cream, cookies, and a Cinabon!! While my sister would always go for the mini chocolate chip cookies from Mrs. Fields, I would go for a big, warm, cinnamon buns. I can still smell the cream cheese frosting that would melt on the gooey treat.

Ok, now I am drooling..just kidding. No, but for real, cinnamon buns are so so so good, and they make for a yummy breakfast!

When I started my Ketogenic journey last year, I need       ed sweets, obviously, and this recipe came up I was intrigued. Cinnamon buns that are low carb, sugar-free, AND melt in your mouth gooeyness? YES PLEASE!

So, once again I brought these to a family dinner, and the official taste testers (see my Grandmother below) approved of this dessert!

The recipe uses fathead dough as the base.


Orange Infused Cinnamon Buns

Ingredients

Dough

3 cups shredded Mozzarella cheese

2 oz cream cheese

1 3/4 cup of almond flour 

1/4 tsp orange extract

2 eggs

1 TBSP baking powder

Cinnamon Filling

3 TBSP butter, melted

2 TBSP cinnamon

2 TBSP Swerve, granular

1/8 tsp orange extract

Glaze

2 oz cream cheese, room temperature

1 TBSP butter, room temperature

1/8 tsp orange extract

3 TBSP Swerve, confectioners

1-3 TBSP milk

Directions

Dough

  1. Preheat oven to 350 degrees.
  2. Mix Almond flour, baking powder, swerve and cinnamon together.
  3. Pour your cheese and cream cheese into a microwave safe dish, and heat for 30 seconds.
  4. Stir your cheese and microwave in 15 second intervals until cheeses are completely melted.
  5. Mix egg and orange extract into melted cheese.
  6. Once incorporated, add dry ingredients and mix. (You can also knead with your hands) 
  7. Chill dough in refrigerator for 10 minutes.
  8. Roll dough between 2 pieces of parchment paper until about 1/4 inch thickness.

Cinnamon Filling

  1. Beat all ingredients together using a stand mixer (mixture should be a bit thick).  
  2. Pour onto dough and spread filling all around.
  3. Roll the dough and slice.
  4.  
  5. Place on parchment paper or baking sheet.
  6. Bake for 20-25 min at 400 degrees.

Glaze

  1. Beat cream cheese and butter together until creamy.
  2. Add in Swerve, orange extract, milk and mix.
  3. Use as dip, or drizzle on top of cooled cinnamon buns.
