Festive Peppermint Bark

It’s no lie that I love chocolate, but I also LOVE mint!

I chew minty gum (to give me minty fresh breath, of course), I still eat peppermint patties, diffuse peppermint in my house, and of course dink peppermint tea! If I could bathe in mint, I probably would 😉 .

SO, back to chocolate.. While preparing and thinking about holiday inspired desserts, I saw a commercial for Godiva Chocolate, best chocolate around. My holiday thoughts started to go snow crazy… ps, I HATE THE COLD! So what could I make that was a mixture of my 2 favorite things, that would be perfectly festive?

Before kids, I used to make pretzel and Oreo cookie bark on a weekly basis… sooo good, but now I need to step up my game. How about chocolate, peppermint bark with crystalized (green) swerve on top? HA!

I saw a picture on Facebook for making your own color/glitter sprinkles out of sugar, I had to give it a try! So, I did.. and even though I smoked out my kitchen in the process (left it in the oven for way too long), the green crystals turned out beautifully!



This chocolate peppermint bark is the perfect sugar-free holiday treat!

Festive Peppermint Bark

  Ingredients:

1 cup of Lily’s Chocolate Chips

6 TBSP Refined Coconut Oil

3 TBSP plus 1/4 cup Swerve, granular

1/2 tsp plus 1/4 tsp Peppermint Extract

1/2 tsp Food coloring  (optional)

Directions:

  1. Mix 1/4 tsp swerve with 1/2 tsp food coloring and spread on parchment paper.
  2. Bake on 350 for 5-8 minutes (check it at 5 minutes).

  3. Heat chocolate chips for 30 seconds at a time, until chocolate is fully melted.
  4. Add 1/4 tsp of peppermint extract, and stir.
  5. Spread on parchment paper and put in refrigerator for 15 minutes (or until hardened).
  6. Mix coconut oil, 1/2 tsp peppermint extract, and Swerve well.
  7. Spread coconut oil mixture on top of hardened chocolate.
  8. Sprinkle with crystalized swerve.
  9. Refrigerate for another 15-20 minutes, or until hardened.
  10. Break into pieces and store in freezer.

    Peppermint. One of the best things about this time of year, chocolate speaking, is that almost every gathering has peppermint chocolate to offer.
