Holiday time…I can’t believe that Halloween is over and now we are all talking about Thanksgiving and Christmas! Always during these holidays there is chatter about gaining so much weight, falling off a diet, and treating yourself…blah blah blah…well helloooo! There are low carb, and easy options available to help us get through the winter.
Growing up I remember making so many different types of cookies with my family. We always had chocolate chip, sugar, and oatmeal raisin. There is one type of cookie that I don’t ever remember making, and I do not understand why! Was my Mom trying to hide the goodness of peanut butter and chocolate from us? Probably not.. but seriously Peanut Butter Blossom Cookies are a holiday favorite for so many! Recently, my sister asked me to make them for her… not low carb or sugar-free by any means. But I did, and she enjoyed them!
So with everyone else enjoying these chewy, chocolatey treats, I went on a mission to find something similar for me (as usual) 🙂
I found my replacement.. Let’s call them Low Carb Blossom Cookies, or how about The Easiest Cookies on Earth to Make…. seriously, ANYONE could whip these up! Only 3 ingredients and the taste is gourmet!

Low Carb Peanut Butter Blossoms
Ingredients
- 1 large egg
- 1 cup peanut butter
- 1/2 cup Swerve
- 1/3 cup of Lily’s Chocolate Chips (melted)
Directions:
- Preheat the oven to 350 degrees.
- Mix all the ingredients together until well combined.
- Roll dough into 1 inch balls using a scoop or your hands.
- Place the dough on a cookie sheet lined with parchment paper.
- Press each ball with a fork twice in opposite directions on each cookie.
- Bake for 12 to 15 minutes or until golden brown.
- Spoon melted chocolate into the middle of each cookie.
- Let cool for 5-10 minutes before serving.
