If you were given a low carb peanut butter cup, would you try it?!
Reese’s are one my favorite candies in the world! I just love peanut butter, especially covered in chocolate.
While dropping my kids off at school, a fellow Mom asked me if I have made any high protein treats. I responded that I hadn’t, but I would definitely give it a shot! So, of course the first thing that came to my mind was a peanut butter chocolate something! Sweet treats that are healthy…. if I could get my kids to get on board…. that would be awesome!
I started to research different recipes, and finally found one that obviously needed my twist.
These peanut butter minis are so moist and flavorful! One of these and a cup of coffee equals the perfect pair! The kids now ask for them as their after school snacks. I’ll call that a Mom win!
Mini Peanut Butter Chocolate Chip Muffins
Ingredients:
- 1/4 cup protein powder (I use this Vanilla Egg White Protein)
- 3/4 cup of almond flour (I use Bob’s Redmill)
- 2 eggs
- 1/2 cup Swerve
- 1/4 tsp cinnamon
- 1/3 cup peanut butter (I use Skippy Natural)
- 1/2 tsp baking powder
- 1 TBSP coconut oil
- 1/3 cup milk (I use 2%)
- 1/2 cup chocolate chips (I use Lily’s)
Directions:
- Preheat oven to 350 degrees.
- Mix protein powder, cinnamon, baking powder and swerve large bowl.
- Add coconut oil, peanut butter and milk.
- Add eggs (1 at a time)
- Fold in chocolate chips (optional)
- Use tablespoon to fill mini muffin pan.
- Bake 15-18 minutes or until golden.
*If you want to make them kid friendly, substitute real sugar for the Swerve* *If you want to omit protein powder, use 1 cup of almond flour for a more nutty flavor*
