My daughter’s birthday was last week, and she requested a fancy shamncy Unicorn cake.. so, in true baker fashion, I took on the challenge and was very impressed with the way it turned out.

Between tasting the batter of the cake and the icing (someone had to make sure it tasted good), I am all sugared out!
This weekend is my Husbands birthday, and remember, he’s a chocolate fanatic! So all that was on my mind was what the heck am I going to make him?!? I searched my pantry for flour, but was out of luck, but I did find a box of Betty Crocker Fudge Brownie mix. Saved by the brownies! I’ll ice it and make a fancy cookie monster.. No taste testing for me! I decided that while his brownies are in the oven, I would make my own.
OMG these are the fudgiest, most chocolatey, sugar-free brownies I have tasted in a long time!
This recipe is actually from an awesome baker I follow on Instagram (@ketocopy), She lists them as muffins, but that instead, I made brownies.
If you love chocolate, you will love this yummy cake too!
Chocolate Brownies
Ingredients:
3 eggs
1/2 cup peanut butter
1 tsp. vanilla
6 TBSP Swerve
1/2 tsp baking powder
2 TBSP sour cream
1/3 cup unsweetened cocoa powder
3 TBSP butter, melted
2 squares bakers chocolate
1/3 cup Lily’s chocolate chips
Directions:
- Preheat oven to 325.
- In a large bowl, mix eggs, peanut butter, vanilla, sour cream and Swerve together.
- In a small bowl, combine cocoa powder and baking powder.
- Melt the butter and chocolates together.
- Add dry ingredients and melted chocolate in large bowl, mix well.
- Pour into brownie pan.
- Bake for 20-25 mins or until set.
