Chocolate Babka

Cake.

Me and cake go way back. My favorites were always the buttercream icing on a birthday cake, the crunches inside a Carvel cake, and even the sugar flowers that topped them. Let’s be honest, I never passed on a piece of cake.

Do you know that Babka is another favorite of mine? Warm it up for 10 seconds and its oozing with chocolatey goodness…. right Dad?

Do you know what a Babka is?

I believe it’s either a Jewish or Polish cake, but you can Google it!

It’s a sweet yeasty dough that has cinnamon, chocolate, raisins or even nuts twisted inside. Lets just call it heaven on a plate.

OMG I could literally eat the entire pan. It’s cakey and chocolatey all in one bite, and definitely  not low carb. So these days I steer clear.

Until now.

When Babka meets low-carb, it becomes a household favorite for everyone! Including my hubby, the chocolate lover!

While trying out different recipes, so many memories were brought to my mind!

Maybe it was the smell, or my end goal, whatever it was, I felt so good baking this.

Low Carb Chocolate Babka

Ingredients:

Cake:

1/2 cups powdered Swerve (or other no calorie sweetener)

1/2 cup coconut flour (I use Bob’s Redmill)

1 tsp baking powder

1/2 tsp salt

1/2 tsp cinnamon

8 TBSP unsalted butter (melted)

1 tsp vanilla extract

6 eggs

5 TBSP heavy whipping cream

Chocolate: 

1/2 cup sugar-free chocolate chips (I use Lily’s)

 

Directions:

Cake: 

  1. Preheat oven to 375.
  2. Combine coconut flour, salt, cinnamon, baking powder in a small bowl.
  3. In a large bowl beat eggs, swerve, melted butter, vanilla, and whipping cream until well combined.
  4. Add dry mixture into large bowl, mix until well combined.
  5. Pour into a greased loaf pan.

Chocolate: 

  1. Melt chocolate chips in microwave in 15 second intervals. Mix well in between, so you do not burn the chocolate.
  2. Pour melted chocolate on top of cake mixture.
  3. Use a knife to swirl around
  4. Bake for 25-30 minutes or until middle is set.
  5. Cool completely and enjoy!
