Sugar Free Hamantashen

Now, back to blogging and sharing my favorite, easy recipes with you 🙂

The Jewish holiday of Purim was last week, and it is always super fun! The kids dress up, lots of songs, and we get to eat the traditional treat, Hamantashen. 

Have you ever had them? OMG! These triangle (symbolic to the story of Purim), cookies that are filled with so many different flavors…. so so so good! In my house, the chocolate chip dough filled with chocolate is a favorite (obviously), but you can make it with any flavor.

In the past, I have bought jars of different jams to change up the flavors, but this year I decided to make my own! NEVER buying jars again! A favorite for me and my customers was the chocolate peanut butter filled with chocolate drizzle. How you can that be bad, right?

These ‘cookies’ are so much fun to make with kids. They can use the circle cookie cutters, add filling, pinch the sides.. and they have a great time and love eating yummy treats that they have made.

There are a ton of recipes out there for Hamantashen, sweet and savory. I chose piggy back on this one, because it is simple, and delicious!

Ingredients

Dough:

  • 2 cups finely ground almond flour1/4 cup Swerve Sweetener1/4 tsp salt1 tsp lemon or orange zest1 large egg2 1/2 tbsp butter, melted1/8 tsp vanilla extract

Filling:

  • 1/2 cup Lily’s Chocolate Chips1/3 cup of creamy peanut butter (I use Skippy)

Instructions:

  1. Preheat the oven to 325F and line a large baking sheet with parchment paper.
  2. Mix almond flour, sweetener, salt and lemon/orange zest in a medium bowl.Add egg, melted butter and vanilla extract,  stir until dough forms.Turn out dough onto a large piece of parchment paper, and place another repine on top.Roll out to 1/8 inch thick. Using a 3 inch round cookie cutter, cut as many circles as possible. *Cover circles with plastic wrap, so dough does not dry out.*
  3. Filling: Melt chocolate chips and peanut butter together for 30 seconds, and mix well. 
  4. Spoon  3/4 of a teaspoon of the filling into the center of each circle and then fold in 3 sides to form a triangle, pinching the corners together.Bake 12 to 15 minutes, until edges are just golden brown.Let cool and then drizzle melted chocolate over top.
